Let’s admit it – salads can be boring. However, during the warmer months, you can elevate your salad game by incorporating beautiful fruits like watermelon, mangoes, or fresh berries to create a next-level summer salad that pairs perfectly with grilled dishes!
If you have an abundance of berries, consider making a 5-minute fresh berry salad. A simple summer salad with burrata or feta and arugula is a great way to showcase the sweet-tart flavour of fresh berries without too much effort!
Berries complement various salad greens such as kale, spinach, spring mix, or arugula. And, if you want to add more layers, sliced English cucumbers or small diced watermelon for an even more refreshing salad are great additions! Strawberry Spinach Salad with briny feta is a prime example of how you can combine sweet and salty flavours to create a savoury salad that’s anything but boring.
Since these berry salads are already bursting with texture and flavour, you can keep the dressing simple by using only extra virgin olive oil and fresh lemon juice to let the fresh ingredients shine.

Begin by seasoning the chicken breast with salt and pepper according to your preference. For an enhanced flavour, consider marinating it in a mixture of 1/4 cup olive oil, 1/4 cup lemon juice, one tablespoon Dijon mustard, and additional salt and pepper for about an hour before grilling. Grill the chicken breast until fully cooked, then allow it to rest for a minimum of five minutes before slicing. In the meantime, add arugula or other type of green salad to the bowl. Add berries, feta, chicken, and candied pecans on top. Finish by drizzling olive oil and balsamic vinegar or your preferred vinaigrette over the salad to your liking.
